This healthy asparagus soup has a fresh, refreshing flavor from fennel that is perfect for summer. It is light, creamy and ready in under 30 minutes!
So things have been going slow over here on The Last Cookie recently. It’s summer and beautiful sunshine, my mom’s here and basically I’ve just been in a lazy mood. I’ve spent the last few weeks just eating, napping and spending time outdoors. To be honest, I don’t really feel guilty of letting work slide by.
I haven’t done much cooking recently either. My mom’s been busy cooking some of my favorite meals for me. I guess I’ll just have to shake off the laziness and get myself in the kitchen soon one of these days. There are plenty of things I plan to cook for my mother and I should get on with it sooner rather than later.
Coming back to this delicious healthy asparagus soup. Do you still like hot soups in summer or do you prefer to go the cold food way? I can eat soup in any season, even when it is scorching hot outside. The only thing is, I prefer soups that are lighter and have a fresh flavor during the hotter months. This creamy asparagus soup is perfect for that.
Also, I love asparagus! If you’re like me, you’re going to love this Brown Butter Chili Garlic Asparagus recipe. Another personal favorite is this Shaved Asparagus and Leek Spring Pasta. So delicious!
The fennel gives it such a fresh anise flavor that it totally screams summer to me. It also makes use of the season’s abundant asparagus and the bright flavor of fresh basil for a herby note. This creamy asparagus soup is basically pretty simple and fuss free. It is ready in 30 minutes and I made it without cream to keep it light. It is still creamy but not too rich so it is easier on the stomach when the weather is hot outside.
Can I freeze homemade asparagus soup?
This soup is freezer friendly so you can easily double the quantity and freeze any leftovers. Simply defrost before use. This way you’ll always have a stash of this comforting soup in your freezer for those busy nights.
This is one of those meals that make you feel so good from the inside. Enjoy it with some crusty bread and you’ll definitely want seconds. It doesn’t have too many ingredients and you can garnish it with pepitas, olive oil and a little bit of yogurt if you prefer. I also love garnishing it with steamed asparagus tips but it is totally optional.
