This sparkling cucumber lemonade recipe is refined sugar free, refreshing and so easy! Perfect for backyard parties, picnics or simply for cooling down on a hot afternoon.
If you love lemonade as much as I do, you’ll love this take on it. Featuring juicy cucumbers and fresh mint, this cooling drink tastes so delicious and refreshing! It is also refined sugar free. It is the perfect drink to serve at barbecue parties or to take along on picnics. I love to sip on it while sitting on the porch to wind down and relax after a long day.
Since we are not using any refined sugar in this recipe we don’t need to make a simple syrup. We simply need to blend the cucumbers, mint, lemon juice, water and maple syrup in the blender. Next, this mixture needs to pass through a sieve to remove the pulp.
All we need to do then is to divide the cucumber juice into four glasses and top it with sparkling water and some ice.
While mint tastes really delicious in this recipe, you can also use fresh basil instead. If you do not prefer sparkling drinks, you can substitute the sparkling water with plain water to make a regular lemonade. You can also substitute the maple syrup for honey. If using honey, use 4 tsps for the entire recipe since honey is much sweeter than maple syrup. If you’d rather enjoy something stronger, add a shot of gin to this lemonade and you’ll have a real party!

Sparkling Cucumber Lemonade Recipe
- 2 medium cucumbers diced
- 1/4 cup fresh mint
- 1/4 cup maple syrup
- Juice of 5-6 lemons
- 2 cups water
- 3-4 cups sparkling water
- Place the diced cucumbers, mint, lemon juice, maple syrup and water in a blender and blend well.
- Pass the mixture through a sieve to extract the pulp. Discard the pulp and divide the cucumber liquid into four glasses.
- Add ice and top with sparkling water.
