This simple arugula salad is made with minimal ingredients that you might already have at home. It is easy and incredibly quick to put together and a great side for any meal!
With the current Covid19 pandemic lockdown, grocery shopping has become very complicated. I’ve cut down on my grocery runs to once every two weeks. Online deliveries from grocery stores are not available for 10 days from the date of order. More than ever, I’ve been relying on simple recipes that require the minimal ingredients. This salad is one such recipe that I’ve been making repeatedly in the last few weeks.
I almost always keep a box of arugula in my refrigerator because it is so versatile to use. You can pair arugula with roasted vegetables like squash, beets and sweet potatoes. For a hearty salad, add farro or couscous. Arugula also pairs well with fruits like pears and apples, like I’ve done in this salad.
There are only three main ingredients in this recipe- arugula, apple and hazelnuts. The arugula salad dressing I’ve used here is the most basic vinaigrette made with high quality olive oil and lemon juice along with seasoning of salt and pepper.
This is also a very versatile recipe so you can always make changes based on what you have available at home. Here I’ve used roasted hazelnuts but if you have pecans you can always use them. Also, pear will work beautifully if you don’t have any apples at home.
For this salad recipe I’ve used roasted hazelnuts. There are two ways you can roast hazelnuts at home- in the oven and on the stove.
If using the oven, preheat it at 350 degrees C. Line your baking sheet with hazelnuts and roast for about 10 minutes until fragrant. Remove from the oven and wrap in a kitchen towel for 5 minutes. Rub the hazelnuts in the kitchen towel to loosen the skin. Remove the skins and allow to cool.
If using the stove, heat a skillet on medium high heat and add the hazelnuts. Toast for about 10 minutes while stirring occasionally until fragrant. Again, wrap in a kitchen towel to steam. Rub together to loosen the skin and allow to cool.
Other than salad, arugula can also be used in several different ways. Use it in sandwiches like this Goat Cheese and Arugula Sandwich. You can also use it to make pesto if you’re out of basil. Another great option is to use it in pizza.
Simple Arugula Salad With Hazelnuts
- 5 cups Arugula packed
- 1 apple thinly sliced
- 1/2 cup hazelnuts roasted
- 2 tbsp olive oil extra virgin
- 2 tbsp lemon juice
- 1 pinch sea salt
- 1 pinch pepper
- Add all the ingredients for the dressing ina mason jar. Close the lid and shake until well combined.
- In a large mixing bowl add the arugula,apple slices and the hazelnuts. Pour the dressing over the salad. Mixthoroughly until all the arugula leaves are coated with the dressing and thenserve.
